I have not seen it but it's a movie called: kubo and the two strings. I'm not sure if the shot is actually in the film but I looked up stop motion films a few years ago after seeing Coraline and Box Trolls. The animator in the shot does indeed remind me of James Rolfe but I don't think it's him.

You are correct. I suppose you didn't like it much as you only watched a few episodes? I think it's a pretty special show with lots of laughs but also sad and hard hitting bits. It's such a weird mix of the two.
